The comfort & joy of sharing a cup of tea and a scone

The joy that comes from the smell of baking and the comfort of sharing a cup of tea or coffee and a scone with loved ones is something we cherish. We would love to share one of our favourite recipes with you so you can cook this at home. 

These scones include rosemary which smells and tastes sublime. We top them with butter, marmalade and of course a blob of freshly whipped cream. For the final touch we add caramelised rhubarb and salted caramel on top of our marmalade. It's an explosion of flavours every mouthful. 

 

Rosemary Scones

3 Cups standard plain flour

6 teaspoons baking powder

¼ teaspoon salt

75g butter

1-1½ Cups milk

1 Sprig of fresh rosemary

Sift flour, baking powder and salt into a bowl. Cut butter in until is resembles fine breadcrumbs. Add milk and mix quickly with a knife to a soft dough. Knead a few times. Lightly dust an oven tray with flour. Press scone dough out onto this. Cut into x12 even sized pieces (or more depending on the size you are after).

Leave a 2cm space between scones. Brush tops with milk.

Bake at 220C for 10 minutes or until golden brown.

 

Top with butter, marmalade, caramelised rhubarb, a top of salted caramel and freshly whipped cream. Enjoy with coffee or tea and your favourite people!
