At canapé company we love to exceed our guests expectations and always try to surprise our clients with extra ordinary platters.
The perfect platter has a great range of tastes and textures and provides something for everyone.
You can have a lot of fun theming platters. We do a great mexican one with chipotle and guacamole dips, mini quesadilla’s and empanada’s, bean salsa and ceviche. Served with a bowl of corn chips. Another great themed platter is an Asian one with vietnamese spring rolls, miso eggplant dip, prawn toasts and mini roti with butter chicken.
Presentation is key to producing a perfect platter. Choosing the platter, wooden board or marble slab is a great start.
We try to keep the food items separate on each platter and use little bowls and sprigs of herbs and edible flowers from the garden to do this. There are some gorgeous and interesting pottery, ceramic and glass bowls also available.
When selecting food items for your platter always keep in mind that less is more. A few delicious carefully chosen items are so much nicer than many uninteresting things.
Dips, salsa’s and pates are always crowd pleasers. We serve these in little bowls on the platters and alongside serve a large bowl of homemade lavosh, bread sticks, crackers, crisps or whatever suits the selection. We also add small bowls of marinated olives, stuffed chillies, pickled vegetables and marinated cheeses. Another idea is to add a phyllo cigar or freshly baked savoury palmier or cheese straw. We love asparagus season and make a fantastic prosciutto, asparagus and parmesan cigar. At other times we make one with pesto, roasted peppers and goats cheese.
A selection of Charcuterie is always a hit. There is a currently a trend towards gorgeous artisan smoked meats. We make all sorts of flavoured meatballs and kofta which are a lovely addition. If you have sticks on these don’t forget a provide a small vessel to put these in. Our all time special is our Cajun chicken, served hot or cold is irresistible.
Everyone will be thrilled to see a gorgeous wedge of carefully chosen cheese on their platter. It matches perfectly with fresh or dried fruits and nuts. There are also some fabulous pastes that will be really interesting to serve with them. In Wellington we source a lot of our platter products from On Trays in Petone or Moore Wilsons.
Finally the addition of a canapé is something we love to do. Our favourites being the yorkshire pud’s with rare beef and horseradish, cherry tomato tarte tatins, and gingerbread, blue cheese, fennel and apple.
