A Canape twist on pancakes!
Last Tuesday was Shrove Tuesday which is the day in February or March immediately preceding Ash Wednesday, which is celebrated in some countries by consuming pancakes.
Pancakes are one of the most simple and satisfying foods enjoyed by cultures all over the globe. Here in Wellington NZ at the Canape Company we have many different versions on our menus.
The classic Russian blinis is a canape that everyone is familiar with. We use these to showcase our house cured gin and beetroot salmon with the twist of horseradish and watercress.
The potato rosti or latke is a gluten free option (our version is) that we have been making for a long time. Ours are topped with pork, orange, fennel and halloumi cheese.
In France they have the famous crepe.
Pancakes are also popular in Asia with the Japanese okonomiyaki, the Korean pajeon the Malaysian roti and murtabak. The Chinese also make a number of pancake style offerings including laobing.
In Wellington our catering team have been creating canapé versions incorporating our favourite flavours and textures into richly flavoured pancake bases. These ones have a delicious Thai chicken curry with crispy mung beans, red peppers and kaffir lime.
